What is New-Mex cuisine?
New-Mex (short for New Mexico) cuisine is a fusion of Native American, Mexican and Spanish cultures and recipes. It differs from Tex-Mex primarily through the prominent use of chile.
New-Mex cuisine, unlike Tex-Mex, goes outside the bounds of tacos, quesadillas and nachos and includes many main dishes that use chile to enhance flavor–Like: Green Chile Burgers, Green Chile Mac & Cheese and more!

505 SOUTHWESTERN CHICKEN ENCHILADA QUICHE
Credit: Sharon WallerPrep time: 10-12 minutes
Cook time: 1 hour
Total time: 1 hour 15 minutes
• 4 eggs
- Preheat oven to 350 degrees
- Follow directions for pie crust, then roll out to fit in a quiche dish or a 9-9 1/2 inch Deep Dish pie pan
- Beat eggs with wire whisk until blended. Beat in half and half. Stir in rest of ingredients. Pour into crust lined pan.
- Sprinkle pepper on top.
- Bake 55-60 minutes or until crust is light golden brown and knife inserted in center comes out clean.
- Let Stand for 10 minutes before serving (This is very important)
- Cut into wedges.
