What is New-Mex cuisine?

New-Mex (short for New Mexico) cuisine is a fusion of Native American, Mexican and Spanish cultures and recipes. It differs from Tex-Mex primarily through the prominent use of chile.

New-Mex cuisine, unlike Tex-Mex, goes outside the bounds of tacos, quesadillas and nachos and includes many main dishes that use chile to enhance flavor–Like: Green Chile Burgers, Green Chile Mac & Cheese and more!

Recipe of the Month

Prep time: 10-12 minutes
Cook time: 1 hour
Total time: 1 hour 15 minutes
Serves: 6-8


•  1 refrigerated ready-to-roll-out pie crust
•  4 eggs
•  1 cup half and half
•  1 – 12.5 oz. can of chunk chicken breast in water, drained
•  1½ cup of broken tortilla chips
•  8 oz (2 cups) of Mexican Mix shredded cheese
•  8 oz (2 cups) of shredded Cheddar cheese
•  1 cup of your favorite 505 Southwestern Salsa
•  ½ cup + 1 tablespoon of 505 Southwestern Roasted Green Chiles
•  ½ tablespoon of salt
•  Pepper to taste
  1. Preheat oven to 350 degrees
  2. Follow directions for pie crust, then roll out to fit in a quiche dish or  a 9-9 1/2 inch Deep Dish pie pan
  3. Beat eggs with wire whisk until blended. Beat in half and half. Stir in rest of ingredients. Pour into crust lined pan.
  4. Sprinkle pepper on top.
  5. Bake 55-60 minutes or until crust is light golden brown and knife inserted in center comes out clean.
  6. Let Stand for 10 minutes before serving (This is very important)
  7. Cut into wedges.
Serve with your favorite 505 Salsa with dollops of sour cream.
Make a meal of it and serve with a green salad.
Leftovers can be frozen and taste great, but the crust doesn’t crisp up again.
